If you like bananas and chocolate together, this recipe is for you! I love making banana bread, it is such a comforting treat that is sweet but not too sweet and super moist. And my house smells so delicious every time I make it. Nuts can be a nice addition too.

INGREDIENTS

  • 2 cups flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/3 cup coconut oil

  • 1/2 cup sugar (I like to mix granulated sugar with coconut sugar)

  • 2 large eggs

  • 4 ripe bananas

  • 1 cup mini semi-sweet chocolate chips (can be replaced by walnuts or pecans)

INSTRUCTIONS

  • Preheat oven to 375 degrees Fahrenheit.

  • Spray a 8.5 x 4.5 bread pan with a non-stick baking spray.

  • In a medium bowl, mash the bananas with a fork.

  • In a large bowl, mix flour, baking soda and salt.

  • In an other bowl, mix the sugar, coconut oil and mashed bananas.

  • Add the dry ingredients to the wet mixture and fold with a spatula.

  • Add the chocolate chips and mix a little more.

  • Pour into the bread pan and bake for about 50 minutes.

  • Take the banana bread out of the oven.

  • Use a small knife to go around the inside of the bread pan, turn the pan over on a plate and then put the banana bread right side up on the cooling rack.

  • Let it cool down a bit or eat right away plain or with a little butter on it.

Bon appétit!
