Gaufres de Liège

This is street food in Belgium and it is so good. Imagine it is Fall or Winter and the weather is kind of cool, you would really enjoy a warm waffle. That is probably the only thing I would buy to eat right away in the street. It warms your hands up and makes your tummy feels so good! You don't really have to be hungry for a Liège waffle, the smell would make you want one right away!

INGREDIENTS
1 kg flour
60g sugar
1 packet of RapidRise Instant Yeast
4 eggs
440 ml milk
570g butter cut in pieces
500g pearl sugar
A few tablespoons powdered sugar
INSTRUCTIONS
In the bowl of a stand mixer, add flour, sugar and yeast and mix together.
Add the eggs and milk, then mix with the hook attachment for about 10 minutes.
Add the butter and mix for another 5 minutes to make sure everything is incorporated.
Let the dough rest for about an hour and a half.
Add the pearl sugar and mix.
Make balls of dough of about 100g each.
Roll them slightly in powder sugar and flatten them a little to a rectacngle shape.
Bake them in a waffle iron (the one I use is a Breville).
I use the setting 3 or 4 depending if I want them very chewy or a little chewy.
The waffle iron beeps when it is ready.
Let the waffles cool down a little before eating.
