Southwest breakfast bowl

Are you more of a sweet or salty breakfast person? I’m definitely more of a salty breakfast person. And I like when breakfast gets ready pretty quick too.
This is a great and simple recipe that you can whip up in about 10 to 15 minutes depending on how you like your veggies cooked.
It’s a nice serving size that keeps you full for a while.

INGREDIENTS FOR 1 SERVING
1 tablespoon olive oil
half an onion, sliced
1.5 - 2 cups bell peppers, chopped
½ cup water
2 eggs, beaten
⅔ cup black beans
salt and pepper
INSTRUCTIONS
Place a skillet over medium heat and add the olive oil. Add the onions and sprinkle them with salt and stir well. Cook them for a few minutes, until they start to get some color. Stir the onions a few times so they all get some browning.
Add the bell peppers and the water and cook them down for a few minutes, until tender and there is no more water.
Add the eggs and scramble them with the veggies.
Once the eggs are cooked, add the black beans and give a final stir.
Serve in a bowl and add a dash of hot sauce.
