Southwest breakfast bowl

Are you more of a sweet or salty breakfast person? I’m definitely more of a salty breakfast person. And I like when breakfast gets ready pretty quick too.

This is a great and simple recipe that you can whip up in about 10 to 15 minutes depending on how you like your veggies cooked.

It’s a nice serving size that keeps you full for a while.



INGREDIENTS FOR 1 SERVING

  • 1 tablespoon olive oil

  • half an onion, sliced

  • 1.5 - 2 cups bell peppers, chopped

  • ½ cup water

  • 2 eggs, beaten

  • ⅔ cup black beans

  • salt and pepper




INSTRUCTIONS

  • Place a skillet over medium heat and add the olive oil. Add the onions and sprinkle them with salt and stir well. Cook them for a few minutes, until they start to get some color. Stir the onions a few times so they all get some browning.

  • Add the bell peppers and the water and cook them down for a few minutes, until tender and there is no more water.

  • Add the eggs and scramble them with the veggies.

  • Once the eggs are cooked, add the black beans and give a final stir.

  • Serve in a bowl and add a dash of hot sauce.
